The wood is safer because of its antibacterial properties. This seems contrary to common sense, but it proved to be a test case (see sources below).

It is, of course, wash the plate, but the wood is on a small number of bacteria remain essentially self-cleaning.

1) The wood is the best overall performance (Camphor Laurel is probably the most anti-) bacterial and cutting / environment.

Well, I have to cook as a profession for many years and I say, good old heavy wooden cutting boards are the right way. I use nylon because they put in the dishwasher. Very, very hot water, soap strict = very clean. I like the idea of glass, but our apartment has marble floors and things fall right.
